Saffron Infused Salmon with Mango Salsa
Ingredients:
- 4 salmon fillets (6 oz each)
- 1/4 tsp saffron threads
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tbsp lemon zest
- 1 tbsp fresh lemon juice
- 1/2 cup mango, diced
- 1/4 cup red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- 1 small jalapeño, seeded and minced (optional)
- 1 tbsp lime juice
Instructions:
- Prepare the Salmon:
- Preheat the oven to 375°F (190°C).
- Soak saffron threads in 1 tbsp warm water for about 5 minutes to activate the color and flavor.
- Season the salmon fillets with salt, pepper, and lemon zest. Drizzle with olive oil and rub the saffron infusion onto each fillet.
- Cook the Salmon:
- Place the salmon fillets on a baking sheet lined with parchment paper or foil. Roast for 12-15 minutes, or until the salmon is opaque and flakes easily with a fork.
- Make the Mango Salsa:
- In a bowl, combine diced mango, red onion, cilantro, jalapeño (if using), and lime juice. Mix gently to combine and set aside to let the flavors meld.
- Serve:
- Once the salmon is cooked, plate the fillets and spoon the fresh mango salsa over the top. Garnish with additional cilantro if desired.
