Saffron Infused Salmon with Mango Salsa

Ingredients:

  • 4 salmon fillets (6 oz each)
  • 1/4 tsp saffron threads
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp lemon zest
  • 1 tbsp fresh lemon juice
  • 1/2 cup mango, diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 1 small jalapeño, seeded and minced (optional)
  • 1 tbsp lime juice

Instructions:

  1. Prepare the Salmon:
    • Preheat the oven to 375°F (190°C).
    • Soak saffron threads in 1 tbsp warm water for about 5 minutes to activate the color and flavor.
    • Season the salmon fillets with salt, pepper, and lemon zest. Drizzle with olive oil and rub the saffron infusion onto each fillet.
  2. Cook the Salmon:
    • Place the salmon fillets on a baking sheet lined with parchment paper or foil. Roast for 12-15 minutes, or until the salmon is opaque and flakes easily with a fork.
  3. Make the Mango Salsa:
    • In a bowl, combine diced mango, red onion, cilantro, jalapeño (if using), and lime juice. Mix gently to combine and set aside to let the flavors meld.
  4. Serve:
    • Once the salmon is cooked, plate the fillets and spoon the fresh mango salsa over the top. Garnish with additional cilantro if desired.
