Miso-Maple Glazed Salmon with Sesame Spinach
Ingredients:
- 4 salmon fillets
- 2 tbsp miso paste (white or red)
- 2 tbsp maple syrup
- 1 tbsp soy sauce
- 1 tsp rice vinegar
- 1 tsp grated ginger
- 2 tsp sesame oil
- 4 cups fresh spinach
- 1 tbsp sesame seeds (for garnish)
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
- Prepare the Salmon Glaze:
- In a small bowl, whisk together miso paste, maple syrup, soy sauce, rice vinegar, and grated ginger until smooth.
- Season the salmon fillets with a pinch of salt and pepper. Brush the glaze generously over the top of each fillet, reserving a little for later.
- Cook the Salmon:
- Heat a skillet over medium-high heat and add a little sesame oil.
- Once hot, place the salmon fillets in the pan, skin-side down (if skin is on). Cook for about 4-5 minutes per side, or until the salmon is cooked through and has a golden-brown crust. Brush with more glaze as the salmon cooks for extra flavor.
- Prepare the Sesame Spinach:
- While the salmon is cooking, heat the remaining sesame oil in another pan over medium heat. Add the minced garlic and sauté until fragrant.
- Add the spinach and sauté for 2-3 minutes, just until wilted. Season with salt and pepper to taste.
- Serve:
- Place the sautéed spinach on a serving plate and top with the miso-maple glazed salmon fillets.
- Garnish with sesame seeds and drizzle with the remaining glaze.
