Miso-Glazed Salmon with Sesame Cucumber Salad
Ingredients:
- 4 salmon fillets
- 3 tbsp white miso paste
- 2 tbsp honey
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp grated ginger
- 1/2 tsp sesame oil
- 1 cucumber (sliced thinly)
- 1/4 cup rice vinegar
- 1 tbsp sesame seeds
- 2 tbsp fresh cilantro (chopped)
- Salt and pepper to taste
- 1 tbsp olive oil (for grilling)
Instructions:
- Prepare the Miso Glaze:
- In a small bowl, whisk together the miso paste, honey, soy sauce, rice vinegar, grated ginger, and sesame oil until smooth.
- Glaze the Salmon:
- Preheat your grill or grill pan to medium-high heat.
- Season the salmon fillets with salt and pepper, then brush them with the miso glaze.
- Grill the salmon for 4-5 minutes per side, or until cooked to your preferred doneness.
- Prepare the Sesame Cucumber Salad:
- In a medium bowl, combine the sliced cucumber, rice vinegar, sesame seeds, and fresh cilantro.
- Toss gently and season with salt and pepper to taste.
- Serve:
- Plate the grilled salmon fillets and spoon a generous amount of the miso glaze on top.
- Serve alongside the sesame cucumber salad and garnish with additional sesame seeds and cilantro.
