Miso-Glazed Salmon with Sesame Cucumber Salad

Ingredients:

  • 4 salmon fillets
  • 3 tbsp white miso paste
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp grated ginger
  • 1/2 tsp sesame oil
  • 1 cucumber (sliced thinly)
  • 1/4 cup rice vinegar
  • 1 tbsp sesame seeds
  • 2 tbsp fresh cilantro (chopped)
  • Salt and pepper to taste
  • 1 tbsp olive oil (for grilling)

Instructions:

  1. Prepare the Miso Glaze:
    • In a small bowl, whisk together the miso paste, honey, soy sauce, rice vinegar, grated ginger, and sesame oil until smooth.
  2. Glaze the Salmon:
    • Preheat your grill or grill pan to medium-high heat.
    • Season the salmon fillets with salt and pepper, then brush them with the miso glaze.
    • Grill the salmon for 4-5 minutes per side, or until cooked to your preferred doneness.
  3. Prepare the Sesame Cucumber Salad:
    • In a medium bowl, combine the sliced cucumber, rice vinegar, sesame seeds, and fresh cilantro.
    • Toss gently and season with salt and pepper to taste.
  4. Serve:
    • Plate the grilled salmon fillets and spoon a generous amount of the miso glaze on top.
    • Serve alongside the sesame cucumber salad and garnish with additional sesame seeds and cilantro.
