Miso-Glazed Beef Skewers with Grilled Vegetables

Ingredients:

For the Beef Skewers:

  • 1 lb flank steak or sirloin, cut into 1-inch cubes
  • 2 tbsp miso paste (white or red)
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 tbsp sesame oil
  • Salt and pepper to taste

For the Grilled Vegetables:

  • 1 zucchini, sliced into thick rounds
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 onion, cut into thick wedges
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Prepare the Miso Marinade:
    • In a bowl, whisk together miso paste, soy sauce, honey, rice vinegar, minced garlic, grated ginger, sesame oil, salt, and pepper.
    • Add the beef cubes to the marinade and toss to coat evenly. Let it marinate for at least 30 minutes (or up to 2 hours for more flavor).
  2. Prepare the Vegetables:
    • In a bowl, toss the zucchini, bell pepper, and onion with olive oil, salt, and pepper.
    • Preheat your grill or grill pan to medium-high heat.
  3. Grill the Skewers:
    • Thread the marinated beef onto skewers, alternating with the vegetables.
    • Grill the skewers for about 3-4 minutes per side for medium-rare, or longer if you prefer the beef more done.
  4. Serve:
    • Arrange the grilled beef skewers and vegetables on a platter.
    • Garnish with chopped fresh cilantro and a squeeze of lime juice if desired.
