Miso-Maple Glazed Salmon with Sesame Spinach

Ingredients:

  • 4 salmon fillets
  • 2 tbsp miso paste (white or red)
  • 2 tbsp maple syrup
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp grated ginger
  • 2 tsp sesame oil
  • 4 cups fresh spinach
  • 1 tbsp sesame seeds (for garnish)
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Prepare the Salmon Glaze:
    • In a small bowl, whisk together miso paste, maple syrup, soy sauce, rice vinegar, and grated ginger until smooth.
    • Season the salmon fillets with a pinch of salt and pepper. Brush the glaze generously over the top of each fillet, reserving a little for later.
  2. Cook the Salmon:
    • Heat a skillet over medium-high heat and add a little sesame oil.
    • Once hot, place the salmon fillets in the pan, skin-side down (if skin is on). Cook for about 4-5 minutes per side, or until the salmon is cooked through and has a golden-brown crust. Brush with more glaze as the salmon cooks for extra flavor.
  3. Prepare the Sesame Spinach:
    • While the salmon is cooking, heat the remaining sesame oil in another pan over medium heat. Add the minced garlic and sauté until fragrant.
    • Add the spinach and sauté for 2-3 minutes, just until wilted. Season with salt and pepper to taste.
  4. Serve:
    • Place the sautéed spinach on a serving plate and top with the miso-maple glazed salmon fillets.
    • Garnish with sesame seeds and drizzle with the remaining glaze.
