Pistachio-Crusted Salmon with a Honey-Lime Glaze
Ingredients:
- 4 salmon fillets
- 1/2 cup shelled pistachios, finely chopped
- 1/4 cup panko breadcrumbs
- 2 tbsp olive oil
- Salt and pepper, to taste
- 2 tbsp honey
- 1 tbsp lime juice
- Zest of 1 lime
- 1 tbsp Dijon mustard
- Fresh cilantro, chopped (for garnish)
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Pistachio Crust: In a bowl, mix the chopped pistachios with the panko breadcrumbs. Season with salt and pepper.
- Prepare the Salmon: Pat the salmon fillets dry with paper towels. Brush both sides with olive oil and season with salt and pepper. Press the pistachio mixture onto the top of each fillet.
- Bake the Salmon: Place the salmon fillets on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until the salmon is cooked through and the crust is golden.
- Make the Honey-Lime Glaze: While the salmon bakes, combine honey, lime juice, lime zest, and Dijon mustard in a small saucepan over medium heat. Bring to a simmer and cook for 2-3 minutes until the glaze thickens slightly.
- Serve: Drizzle the honey-lime glaze over the baked salmon fillets. Garnish with fresh cilantro and serve with your choice of sides like roasted vegetables or rice
