Pistachio-Crusted Salmon with a Honey-Lime Glaze

Ingredients:

  • 4 salmon fillets
  • 1/2 cup shelled pistachios, finely chopped
  • 1/4 cup panko breadcrumbs
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 2 tbsp honey
  • 1 tbsp lime juice
  • Zest of 1 lime
  • 1 tbsp Dijon mustard
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Pistachio Crust: In a bowl, mix the chopped pistachios with the panko breadcrumbs. Season with salt and pepper.
  3. Prepare the Salmon: Pat the salmon fillets dry with paper towels. Brush both sides with olive oil and season with salt and pepper. Press the pistachio mixture onto the top of each fillet.
  4. Bake the Salmon: Place the salmon fillets on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until the salmon is cooked through and the crust is golden.
  5. Make the Honey-Lime Glaze: While the salmon bakes, combine honey, lime juice, lime zest, and Dijon mustard in a small saucepan over medium heat. Bring to a simmer and cook for 2-3 minutes until the glaze thickens slightly.
  6. Serve: Drizzle the honey-lime glaze over the baked salmon fillets. Garnish with fresh cilantro and serve with your choice of sides like roasted vegetables or rice
