Lemon Garlic Butter Shrimp with Asparagus
Ingredients:
- 1 lb large shrimp (peeled and deveined)
- 1 bunch asparagus (trimmed and cut into 2-inch pieces)
- 3 tbsp butter
- 4 garlic cloves (minced)
- 1 lemon (zested and juiced)
- 1 tbsp fresh parsley (chopped)
- Salt and pepper to taste
- 1/2 tsp crushed red pepper flakes (optional)
- Olive oil for cooking
Instructions:
- Prepare the Asparagus:
- Heat a large skillet over medium heat and add a drizzle of olive oil.
- Add the asparagus and sauté for 3-4 minutes, until tender but still crisp. Remove from the pan and set aside.
- Cook the Shrimp:
- In the same skillet, melt the butter over medium heat.
- Add the minced garlic and sauté for 1-2 minutes, until fragrant.
- Add the shrimp to the pan and cook for 2-3 minutes on each side until pink and opaque.
- Make the Lemon Garlic Butter Sauce:
- Add the lemon juice, zest, and red pepper flakes (if using) to the pan. Stir to combine and let the sauce simmer for 1-2 minutes.
- Combine Shrimp and Asparagus:
- Return the sautéed asparagus to the pan with the shrimp. Toss everything together until well coated with the lemon garlic butter sauce.
- Serve:
- Garnish with fresh parsley and serve immediately with your favorite side dish.
