Lemon Garlic Butter Shrimp with Asparagus

Ingredients:

  • 1 lb large shrimp (peeled and deveined)
  • 1 bunch asparagus (trimmed and cut into 2-inch pieces)
  • 3 tbsp butter
  • 4 garlic cloves (minced)
  • 1 lemon (zested and juiced)
  • 1 tbsp fresh parsley (chopped)
  • Salt and pepper to taste
  • 1/2 tsp crushed red pepper flakes (optional)
  • Olive oil for cooking

Instructions:

  1. Prepare the Asparagus:
    • Heat a large skillet over medium heat and add a drizzle of olive oil.
    • Add the asparagus and sauté for 3-4 minutes, until tender but still crisp. Remove from the pan and set aside.
  2. Cook the Shrimp:
    • In the same skillet, melt the butter over medium heat.
    • Add the minced garlic and sauté for 1-2 minutes, until fragrant.
    • Add the shrimp to the pan and cook for 2-3 minutes on each side until pink and opaque.
  3. Make the Lemon Garlic Butter Sauce:
    • Add the lemon juice, zest, and red pepper flakes (if using) to the pan. Stir to combine and let the sauce simmer for 1-2 minutes.
  4. Combine Shrimp and Asparagus:
    • Return the sautéed asparagus to the pan with the shrimp. Toss everything together until well coated with the lemon garlic butter sauce.
  5. Serve:
    • Garnish with fresh parsley and serve immediately with your favorite side dish.
