Grilled Lemon Herb Salmon with Avocado Salsa
Ingredients:
- 4 salmon fillets
- 2 tbsp olive oil
- 1 lemon (zested and juiced)
- 2 cloves garlic (minced)
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 avocado (diced)
- 1/2 cup cherry tomatoes (halved)
- 1/4 red onion (finely chopped)
- Fresh cilantro (chopped, for garnish)
- 1 tbsp lime juice
- 1 tbsp olive oil (for salsa)
Instructions:
- Prepare the Salmon:
- Preheat the grill or a grill pan to medium-high heat.
- In a small bowl, combine olive oil, lemon zest, lemon juice, garlic, oregano, smoked paprika, salt, and pepper.
- Rub the mixture evenly over the salmon fillets.
- Grill the Salmon:
- Place the salmon fillets on the grill, skin-side down if possible.
- Grill for about 4-5 minutes on each side, or until the salmon is cooked through and has nice grill marks.
- Make the Avocado Salsa:
- While the salmon is grilling, combine the diced avocado, cherry tomatoes, red onion, cilantro, lime juice, and olive oil in a small bowl.
- Season with salt and pepper to taste.
- Serve:
- Once the salmon is cooked, plate it and top with the fresh avocado salsa.
- Garnish with extra cilantro and a squeeze of lime juice if desired.
