Garlic Herb Butter Tomahawk Steak

Ingredients:

  • 1 tomahawk steak (2-3 lbs, about 2 inches thick)
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter, softened
  • 2 garlic cloves, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • Salt and freshly ground black pepper
  • Flaky sea salt (optional for garnish)

Instructions:

  1. Prepare the Steak:
    • Remove the steak from the refrigerator at least 30 minutes before cooking to allow it to come to room temperature.
    • Season generously on both sides with salt and freshly ground black pepper.
  2. Make the Garlic Herb Butter:
    • In a small bowl, mix the softened butter with minced garlic, chopped rosemary, and thyme. Set aside.
  3. Sear the Steak:
    • Preheat your oven to 375°F (190°C).
    • Heat a large cast-iron skillet over high heat. Add olive oil.
    • Sear the tomahawk steak for 2-3 minutes on each side, ensuring a golden crust forms. Don’t forget to sear the edges for even browning.
  4. Finish in the Oven:
    • Place the skillet with the steak in the preheated oven. Cook for 8-10 minutes for medium-rare, or adjust time to your preferred doneness (use a meat thermometer: 130°F for medium-rare).
  5. Rest and Serve:
    • Remove the steak from the oven and place it on a cutting board. Spread the garlic herb butter on top and let it rest for 10 minutes.
    • Slice the steak against the grain and garnish with flaky sea salt if desired. Serve with roasted vegetables or mashed potatoes for a complete meal.
