Spicy Maple Glazed Salmon with Sesame Spinach
Ingredients:
- For the Salmon:
- 4 salmon fillets (6 oz each)
- 3 tbsp maple syrup
- 1 tbsp soy sauce
- 1 tsp Sriracha (or adjust to taste)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper to taste
- For the Sesame Spinach:
- 1 tbsp sesame oil
- 2 garlic cloves, minced
- 6 cups fresh spinach
- 1 tsp soy sauce
- 1 tsp toasted sesame seeds
Instructions:
- Prepare the Salmon:
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix maple syrup, soy sauce, Sriracha, garlic powder, smoked paprika, salt, and pepper.
- Place the salmon fillets on a baking sheet lined with parchment paper. Brush the glaze generously over the salmon.
- Bake the Salmon:
- Bake the salmon for 12-15 minutes, or until it flakes easily with a fork. Broil for an additional 1-2 minutes for a caramelized finish.
- Cook the Sesame Spinach:
- Heat sesame oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
- Add the spinach and stir-fry until wilted. Stir in soy sauce and sprinkle with toasted sesame seeds.
- Serve:
- Plate the salmon on a bed of sesame spinach. Garnish with additional sesame seeds or a squeeze of lemon if desired.
