Spicy Maple Glazed Salmon with Sesame Spinach

Ingredients:

  • For the Salmon:
    • 4 salmon fillets (6 oz each)
    • 3 tbsp maple syrup
    • 1 tbsp soy sauce
    • 1 tsp Sriracha (or adjust to taste)
    • 1 tsp garlic powder
    • 1 tsp smoked paprika
    • Salt and pepper to taste
  • For the Sesame Spinach:
    • 1 tbsp sesame oil
    • 2 garlic cloves, minced
    • 6 cups fresh spinach
    • 1 tsp soy sauce
    • 1 tsp toasted sesame seeds

Instructions:

  1. Prepare the Salmon:
    • Preheat your oven to 375°F (190°C).
    • In a small bowl, mix maple syrup, soy sauce, Sriracha, garlic powder, smoked paprika, salt, and pepper.
    • Place the salmon fillets on a baking sheet lined with parchment paper. Brush the glaze generously over the salmon.
  2. Bake the Salmon:
    • Bake the salmon for 12-15 minutes, or until it flakes easily with a fork. Broil for an additional 1-2 minutes for a caramelized finish.
  3. Cook the Sesame Spinach:
    • Heat sesame oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
    • Add the spinach and stir-fry until wilted. Stir in soy sauce and sprinkle with toasted sesame seeds.
  4. Serve:
    • Plate the salmon on a bed of sesame spinach. Garnish with additional sesame seeds or a squeeze of lemon if desired.
