Herb-Crusted Salmon with Lemon Dill Sauce

Ingredients:

  • For the Salmon:
    • 4 salmon fillets (6 oz each)
    • 1/2 cup panko breadcrumbs
    • 2 tbsp fresh parsley, chopped
    • 2 tbsp fresh dill, chopped
    • 1 garlic clove, minced
    • 2 tbsp olive oil
    • Zest of 1 lemon
    • Salt and pepper to taste
  • For the Lemon Dill Sauce:
    • 1/2 cup Greek yogurt
    • 2 tbsp fresh dill, chopped
    • 1 tbsp lemon juice
    • 1 garlic clove, minced
    • Salt and pepper to taste

Instructions:

  1. Prepare the Herb Crust:
    • Preheat your oven to 400°F (200°C).
    • In a small bowl, mix the breadcrumbs, parsley, dill, garlic, olive oil, lemon zest, salt, and pepper.
  2. Prepare the Salmon:
    • Place the salmon fillets on a baking sheet lined with parchment paper.
    • Spoon the herb mixture over the top of each fillet, pressing gently to adhere.
  3. Bake the Salmon:
    • Bake for 12-15 minutes, or until the salmon is cooked through and the crust is golden brown.
  4. Make the Lemon Dill Sauce:
    • In a small bowl, whisk together Greek yogurt, dill, lemon juice, garlic, salt, and pepper. Adjust seasoning to taste.
  5. Serve:
    • Plate the salmon and drizzle with the lemon dill sauce. Serve with steamed vegetables or a fresh green salad.
