Herb-Crusted Salmon with Lemon Dill Sauce
Ingredients:
- For the Salmon:
- 4 salmon fillets (6 oz each)
- 1/2 cup panko breadcrumbs
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh dill, chopped
- 1 garlic clove, minced
- 2 tbsp olive oil
- Zest of 1 lemon
- Salt and pepper to taste
- For the Lemon Dill Sauce:
- 1/2 cup Greek yogurt
- 2 tbsp fresh dill, chopped
- 1 tbsp lemon juice
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions:
- Prepare the Herb Crust:
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix the breadcrumbs, parsley, dill, garlic, olive oil, lemon zest, salt, and pepper.
- Prepare the Salmon:
- Place the salmon fillets on a baking sheet lined with parchment paper.
- Spoon the herb mixture over the top of each fillet, pressing gently to adhere.
- Bake the Salmon:
- Bake for 12-15 minutes, or until the salmon is cooked through and the crust is golden brown.
- Make the Lemon Dill Sauce:
- In a small bowl, whisk together Greek yogurt, dill, lemon juice, garlic, salt, and pepper. Adjust seasoning to taste.
- Serve:
- Plate the salmon and drizzle with the lemon dill sauce. Serve with steamed vegetables or a fresh green salad.
