Coffee-Rubbed Steak with Chimichurri Sauce

Ingredients:

  • For the Steak:
    • 2 New York strip steaks (1-inch thick)
    • 2 tbsp ground coffee (freshly ground preferred)
    • 1 tsp smoked paprika
    • 1 tsp garlic powder
    • 1/2 tsp cayenne pepper (optional)
    • 1 tsp brown sugar
    • Salt and black pepper to taste
    • 2 tbsp olive oil
  • For the Chimichurri Sauce:
    • 1 cup fresh parsley (finely chopped)
    • 1/4 cup fresh cilantro (finely chopped)
    • 3 garlic cloves (minced)
    • 1/2 tsp red pepper flakes
    • 2 tbsp red wine vinegar
    • 1/3 cup olive oil
    • Salt and pepper to taste

Instructions:

  1. Prepare the Coffee Rub:
    • In a small bowl, mix the ground coffee, smoked paprika, garlic powder, cayenne pepper, brown sugar, salt, and black pepper.
  2. Season the Steaks:
    • Pat the steaks dry and coat both sides generously with the coffee rub. Press the rub into the steak for better adhesion.
  3. Cook the Steaks:
    • Heat olive oil in a cast-iron skillet over medium-high heat until shimmering.
    • Add the steaks and sear for 4-5 minutes on each side for medium-rare (adjust cooking time to your preference).
    • Remove the steaks from the skillet, cover loosely with foil, and let rest for 5 minutes.
  4. Make the Chimichurri Sauce:
    • In a bowl, combine parsley, cilantro, garlic, red pepper flakes, and red wine vinegar. Slowly whisk in olive oil. Season with salt and pepper to taste.
  5. Serve:
    • Slice the steak against the grain and drizzle with chimichurri sauce. Serve with roasted vegetables or mashed potatoes for a complete meal.
