Coffee-Rubbed Steak with Chimichurri Sauce
Ingredients:
- For the Steak:
- 2 New York strip steaks (1-inch thick)
- 2 tbsp ground coffee (freshly ground preferred)
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper (optional)
- 1 tsp brown sugar
- Salt and black pepper to taste
- 2 tbsp olive oil
- For the Chimichurri Sauce:
- 1 cup fresh parsley (finely chopped)
- 1/4 cup fresh cilantro (finely chopped)
- 3 garlic cloves (minced)
- 1/2 tsp red pepper flakes
- 2 tbsp red wine vinegar
- 1/3 cup olive oil
- Salt and pepper to taste
Instructions:
- Prepare the Coffee Rub:
- In a small bowl, mix the ground coffee, smoked paprika, garlic powder, cayenne pepper, brown sugar, salt, and black pepper.
- Season the Steaks:
- Pat the steaks dry and coat both sides generously with the coffee rub. Press the rub into the steak for better adhesion.
- Cook the Steaks:
- Heat olive oil in a cast-iron skillet over medium-high heat until shimmering.
- Add the steaks and sear for 4-5 minutes on each side for medium-rare (adjust cooking time to your preference).
- Remove the steaks from the skillet, cover loosely with foil, and let rest for 5 minutes.
- Make the Chimichurri Sauce:
- In a bowl, combine parsley, cilantro, garlic, red pepper flakes, and red wine vinegar. Slowly whisk in olive oil. Season with salt and pepper to taste.
- Serve:
- Slice the steak against the grain and drizzle with chimichurri sauce. Serve with roasted vegetables or mashed potatoes for a complete meal.
