Coffee-Crusted Steak with Chili-Maple Glaze
Ingredients:
- For the Steak:
- 2 thick-cut sirloin or ribeye steaks
- 2 tbsp ground coffee (medium roast)
- 1 tbsp smoked paprika
- 1 tsp brown sugar
- 1 tsp garlic powder
- 1 tsp ground cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- For the Chili-Maple Glaze:
- 1/4 cup pure maple syrup
- 1 tbsp soy sauce
- 1 tsp red chili flakes
- 1 tsp Dijon mustard
Instructions:
- Prepare the Coffee Rub:
- In a small bowl, mix ground coffee, smoked paprika, brown sugar, garlic powder, cumin, salt, and black pepper.
- Pat the steaks dry and coat them generously with the coffee rub on both sides. Let them rest at room temperature for 20 minutes.
- Make the Chili-Maple Glaze:
- In a saucepan, combine maple syrup, soy sauce, chili flakes, and Dijon mustard.
- Simmer over low heat for 5 minutes, stirring occasionally, until slightly thickened. Set aside.
- Sear the Steak:
- Heat olive oil in a cast-iron skillet over medium-high heat.
- Add the steaks and sear for 3-4 minutes on each side for medium-rare, or adjust the time for your desired doneness.
- Glaze the Steak:
- During the last minute of cooking, brush the chili-maple glaze over the steaks for a sticky, caramelized crust.
- Remove the steaks from the pan and let them rest for 5 minutes.
- Serve:
- Slice the steaks against the grain and drizzle any remaining glaze over the top.
- Serve with roasted sweet potatoes or a fresh arugula salad.
