Garlic Herb Butter Steak

Ingredients:

  • For the Steak:
    • 2 ribeye or strip steaks (1-inch thick)
    • Salt and pepper to taste
    • 2 tbsp olive oil
    • 3 garlic cloves, smashed
  • For the Herb Butter:
    • 4 tbsp unsalted butter, softened
    • 1 tbsp fresh parsley, finely chopped
    • 1 tsp fresh thyme leaves
    • 1 tsp fresh rosemary, chopped
    • 1 garlic clove, minced
    • Pinch of salt

Instructions:

  1. Prepare the Herb Butter:
    • In a small bowl, mix softened butter with parsley, thyme, rosemary, minced garlic, and a pinch of salt. Set aside or refrigerate if preparing in advance.
  2. Season the Steaks:
    • Pat the steaks dry with a paper towel. Generously season both sides with salt and freshly cracked black pepper.
  3. Cook the Steaks:
    • Heat olive oil in a cast-iron skillet over high heat until shimmering.
    • Add the steaks and sear for 3-4 minutes on each side for medium-rare, or longer depending on your preferred doneness.
    • During the last minute of cooking, add smashed garlic cloves to the pan for added flavor.
  4. Rest and Top with Butter:
    • Remove the steaks from the pan and let them rest for 5 minutes.
    • While still warm, top each steak with a dollop of garlic herb butter. Allow it to melt over the steak.
  5. Serve:
    • Slice the steak against the grain and serve with your favorite sides, such as roasted vegetables, mashed potatoes, or a crisp salad.
