Thai Basil Chicken (Pad Kra Pao)
Ingredients:
- For the Chicken:
- 1 lb (450g) ground chicken
- 2 tbsp vegetable oil
- 4 cloves garlic, minced
- 2 red chilies, finely chopped (adjust to taste)
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp fish sauce
- 1 tsp sugar
- 1 cup Thai basil leaves (or regular basil if unavailable)
- For Serving:
- Cooked jasmine rice
- Fried egg (optional)
Instructions:
- Prepare the Sauce:
- In a small bowl, mix soy sauce, oyster sauce, fish sauce, and sugar. Set aside.
- Cook the Chicken:
- Heat the vegetable oil in a wok or large skillet over medium heat.
- Add minced garlic and chopped chilies, stirring for 30 seconds until fragrant.
- Increase heat to high, add the ground chicken, and stir-fry until fully cooked and no longer pink.
- Combine and Add Basil:
- Pour the prepared sauce over the chicken and mix well. Let it cook for 1-2 minutes, allowing the flavors to meld.
- Toss in the Thai basil leaves and stir just until wilted, about 30 seconds.
- Serve:
- Serve the chicken hot over jasmine rice, topped with a fried egg if desired.
