Thai Basil Chicken (Pad Kra Pao)

Ingredients:

  • For the Chicken:
    • 1 lb (450g) ground chicken
    • 2 tbsp vegetable oil
    • 4 cloves garlic, minced
    • 2 red chilies, finely chopped (adjust to taste)
    • 2 tbsp soy sauce
    • 1 tbsp oyster sauce
    • 1 tsp fish sauce
    • 1 tsp sugar
    • 1 cup Thai basil leaves (or regular basil if unavailable)
  • For Serving:
    • Cooked jasmine rice
    • Fried egg (optional)

Instructions:

  1. Prepare the Sauce:
    • In a small bowl, mix soy sauce, oyster sauce, fish sauce, and sugar. Set aside.
  2. Cook the Chicken:
    • Heat the vegetable oil in a wok or large skillet over medium heat.
    • Add minced garlic and chopped chilies, stirring for 30 seconds until fragrant.
    • Increase heat to high, add the ground chicken, and stir-fry until fully cooked and no longer pink.
  3. Combine and Add Basil:
    • Pour the prepared sauce over the chicken and mix well. Let it cook for 1-2 minutes, allowing the flavors to meld.
    • Toss in the Thai basil leaves and stir just until wilted, about 30 seconds.
  4. Serve:
    • Serve the chicken hot over jasmine rice, topped with a fried egg if desired.
