Spicy Mango Chicken Tacos

Ingredients:

For the Chicken:

4 boneless, skinless chicken breasts
1 tbsp olive oil
1 tbsp chili powder
1 tsp paprika
1/2 tsp cumin
1/2 tsp garlic powder
Salt and pepper to taste
1/2 cup mango puree (fresh or store-bought)
1 tbsp lime juice
For the Mango Salsa:

1 ripe mango, peeled and diced
1/4 cup red onion, finely chopped
1/4 cup cilantro, chopped
1 small jalapeño, finely chopped (optional)
1 tbsp lime juice
Salt to taste
For the Tacos:

8 small soft tortillas (flour or corn)
1/2 cup shredded lettuce or cabbage
1/4 cup crumbled feta or cotija cheese
Sour cream (optional, for garnish)
Instructions:

Prepare the Chicken:

In a small bowl, mix together chili powder, paprika, cumin, garlic powder, salt, and pepper.
Rub the spice mix onto the chicken breasts.
Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 6-7 minutes per side, or until fully cooked (internal temperature should reach 165°F or 74°C).
Once cooked, remove the chicken from the pan and let it rest for a few minutes before slicing into thin strips.
Make the Mango Salsa:

In a small bowl, combine diced mango, red onion, cilantro, jalapeño (if using), lime juice, and salt. Toss gently to combine.
Assemble the Tacos:

Warm the tortillas in a dry skillet or microwave for a few seconds until soft and pliable.
Spread a layer of shredded lettuce or cabbage on each tortilla.
Add the sliced chicken on top, then spoon the mango salsa over the chicken.
Sprinkle with crumbled feta or cotija cheese and a dollop of sour cream, if desired.

Serve the tacos with lime wedges on the side for extra zest.
