Beef and Mango Stir-Fry
Ingredients:
1 lb flank steak or sirloin, thinly sliced against the grain
1 ripe mango, peeled and diced
1 red bell pepper, julienned
1 medium onion, thinly sliced
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp honey
1 tsp freshly grated ginger
2 cloves garlic, minced
2 tbsp vegetable oil
1 tbsp rice vinegar
1 tbsp sesame oil
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
Optional: 1 tbsp toasted sesame seeds
Instructions:
Prepare the Beef:
Season the thinly sliced beef with salt, pepper, and 1 tbsp of soy sauce. Set aside.
Cook the Stir-Fry:
Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat.
Add the beef and cook for 2-3 minutes, stirring frequently, until browned and cooked through. Remove the beef from the skillet and set aside.
Prepare the Sauce:
In a small bowl, whisk together the remaining soy sauce, oyster sauce, honey, rice vinegar, sesame oil, ginger, and garlic.
Stir-Fry the Vegetables:
In the same skillet, add the remaining 1 tbsp of vegetable oil.
Add the onion and bell pepper and cook for 2-3 minutes until they start to soften but still remain crisp.
Combine and Finish:
Return the beef to the skillet and pour the prepared sauce over the ingredients. Stir to coat everything evenly and cook for another 2-3 minutes.
Add the diced mango and toss gently to combine. Let the mango heat through without becoming mushy.
Serve:
Garnish with chopped cilantro and optional sesame seeds.
Serve with steamed rice or noodles for a complete meal.
