Teriyaki Glazed Salmon Bowls
Ingredients:
4 salmon fillets
1/4 cup honey
2 tbsp rice vinegar
2 garlic cloves, minced
1 tsp grated ginger
1 tbsp cornstarch mixed with 2 tbsp water
2 cups steamed white or brown rice
1 cup shredded carrots
1 cup edamame, cooked
1 avocado, sliced
2 green onions, chopped
Sesame seeds for garnish
Instructions:
Make the Teriyaki Sauce:
In a small saucepan, combine soy sauce, honey, rice vinegar, minced garlic, and grated ginger.
Bring to a simmer over medium heat, then stir in the cornstarch slurry. Cook until the sauce thickens, about 2-3 minutes. Remove from heat.
Cook the Salmon:
Preheat a skillet over medium heat. Lightly oil the pan and sear the salmon fillets skin-side down for 3-4 minutes.
Flip the fillets, brush generously with teriyaki sauce, and cook for another 3-4 minutes until cooked through.
Assemble the Bowls:
Divide the rice between four bowls. Top with shredded carrots, edamame, avocado slices, and cooked salmon.
Drizzle extra teriyaki sauce over the top.
Garnish:
Sprinkle with sesame seeds and chopped green onions before serving.
