Herb-Crusted Salmon with Lemon-Dill Sauce

Ingredients:

4 salmon fillets (6 oz each)

1/4 cup breadcrumbs (preferably panko)

1 tbsp fresh parsley, chopped

1 tbsp fresh thyme, chopped

1 tbsp fresh dill, chopped

2 tbsp olive oil

Salt and pepper to taste

For the Lemon-Dill Sauce:

1/2 cup Greek yogurt

1 tbsp lemon juice

1 tsp lemon zest

1 tbsp fresh dill, chopped

1 tbsp olive oil

Salt and pepper to taste

Instructions:

Prepare the Salmon:

Preheat the oven to 400°F (200°C).

In a small bowl, mix the breadcrumbs, parsley, thyme, dill, olive oil, salt, and pepper.

Place the salmon fillets on a baking sheet lined with parchment paper.

Press the breadcrumb mixture onto the top of each salmon fillet, creating a crust.

Bake the Salmon:

Bake the salmon for 12-15 minutes, or until the fish flakes easily with a fork and the crust is golden brown.

Make the Lemon-Dill Sauce:

While the salmon bakes, combine the Greek yogurt, lemon juice, lemon zest, dill, olive oil, salt, and pepper in a small bowl.

Stir until smooth and well combined.

Serve:

Once the salmon is done, serve it with a generous dollop of lemon-dill sauce on top.

Garnish with extra fresh dill or lemon slices, if desired.
